Colwyn's lentil soup

Bloody cold here today so I made a pot of Colwyn's lentil soup. So easy to make and soo tasty. Anyone who has never made it should give it a try.Like I said, so easy to make and great taste. Recipe was first on the forum 19th 2008. I have been making it ever since.

Here's his recipe
Turkish Red Lentil Soup

Ingredients
10 oz      red lentils, washed & cleaned
1½ litres   vegetable stock
1      onion, finely chopped
1       med/large potato, finely diced
1      heaped teaspoon paprika
1      teaspoon salt
-      chilli powder (to taste)
-      pepper (to taste)
-      juice of half lemon
-      slice other half of lemon to garnish

Method
1.    Put lentils, stock, potatoes, onions, paprika, and chilli in saucepan. Bring to boil, reduce to simmer, put lid on slightly ajar. Cook for 30-40 minutes. Add salt and pepper.
2.   Take out about ¼ of soup and set to one side. Blend/whizz the remaining soup. Put the reserved mix back in, add lemon juice, check seasoning and reheat.
3.    Serve (perhaps floating lemon slices on top).

Serves 6

Love lentil soup, my hubby makes this a lot. In fact just last night we ate it with Turkish bread.... delish   ;)

Haha yes Scunner we are in the UK and no he didn't make the bread as we have a local supermarket which bakes it on the premises. Although my hubby has many talents in the cooking department, I'm sure he couldn't make this particular bread quite as good Shhh   ;)

Our local Turkish supermarket is in Leith (the port of Edinburgh) so quite a trek for us to go (around 45 miles each way). And they don't have a bakery :o

Scunner bulk buy and freeze it. Use your neighbours freezer if you have too in exchange for a few bread.  ;D
