Quince Wine (dry)

Its that time of year - Quinces dropping off the trees here so got to make a wine out of them. Makes 1 gallon or 5 ltr.

Ingredients
20 Quinces
1.5kg sugar
2 Lemons
Pectolase 1 tspn of you have it
Yeast
Nutrient
Water to 5ltr or 4.5 water bottle

Method
Wash and grate as near to the core as poss - the quinces, add water to cover and bring to the boil for 15mins only. If boiled longer it may not clear.
Then strain onto sugar in a bucket and add zest and juice of the 2 lemons. Leave to cool then add nutrient, pectolase and yeast.
Leave in bucket for 4 days (cover with muslin or clean tea towel) stirring daily then add to demijohn and add air lock, then let it ferment right out until no more bubbles then rack off into another demijohn and add 1 campden tablet and leave to mature. Should be able to bottle in december if dropped clear.
You can always back sweeten with sweetners if you dont like dry wine. ;)
